With Christmas just 6 sleeps away and the delicious over indulgence that occurs during the Holiday season (despite our best efforts to the contrary) less than a week away, we are thrilled to share with you this absolutely scrumptious recipe for White Christmas that replaces sugar with Xylitol.
3 cups rice bubbles
1 cup desiccated coconut
2/3 cup Xylitol
1 cup powdered milk
1 ¼ cups mixed fruit
250 grams copha melted and slightly cooled
Grease a 30cmx20cm lamington tin.
Combine all dried ingredients in a large mixing bowl. Add copha and mix well.
Place and press mixture into prepared tin. Place in fridge and leave overnight or until set.
Cut into squares to serve
